Peel, wash and wipe the potatoes dry. Dice the potatoes and cut the bacon into strips. Sweat the bacon in 2 tablespoons of oil over a moderate heat. Add the butter and when it is hot, add the potatoes. SautÄ on a high heat for approximately 10 minutes, stirring regularly. Lower the heat and continue to cook for about 20 minutes. When the potatoes are cooked, spread slices of cheese over them. Cover and take off the stove. When the cheese has melted, serve immediately on hot plates.
